Ideally the topside joint should be roasted slowly or braised.
When cooked and left to cool, it makes wonderful sandwiches and salads.
Our beef is hung for a minimum of 21 days which allows the meat to tenderise and to lose excess water content. This helps to prevent shrinkage when cooking.
Silverside - 1Kg
This cut is so called because of the membrane covering one surface which is removed by the butcher and has a silvery finish. Silverside benefits by slow roasting, pot roasting or stewing.

Rump Roast
Enjoy a fine rump roast for Christmas or any other time. Order in the weight you want allowing around 250g per serving or more if you’ve got a hungry family.
